To prepare a good espresso with a professional group machine, it is important to follow these steps:
1- Grinding: For an espresso, the grind should be fine. For a long coffee, the grind should be slightly coarser than for espresso.
2- Dosage: For an espresso, use about 7-9 g of ground coffee. For a long coffee, use 10-12 g of coffee.
3- Tamping: Distribute the ground coffee evenly in the portafilter and tamp it firmly with a tamper to create a flat surface.
4- Extraction: The espresso should have a beautiful hazelnut brown color with a golden, velvety crema.
5- Serving: Serve the espresso immediately in a pre-warmed cup to maintain the temperature.
